3 Easy Recipes for Your Pool Party Menu

Nothing says summer like hosting a festive pool party. Whether it is for the Fourth of July, Labor Day, a birthday or just because it’s summer, you should try to take advantage of the weather and your pool by hosting an outdoor party. While having a celebration is always fun, planning a pool party can be stressful. You may be worrying about a particular party theme, decorations, music, sending out invitations, and most importantly what will be on the menu.

Creating a menu that appeals to all of your guests can be challenging, especially for picky eaters. You may be tempted to hire a caterer or spend your entire paycheck at the grocery store to create an elaborate menu. Truthfully, you don’t need to break the bank to delight your guests; you just need to keep the menu light and simple.

Take a Dip

Whether it is a simple salsa or a 7-layer dip, everyone loves chips and dip! These dishes are light, are packed with a lot of different flavors, and are simple to make, store, and they don’t take up room placing on a table. Trying using this delicious recipe at your next pool party:

Tropical Guacamole

This spin on a traditional recipe will have your guests craving more! For this recipe you will need:

  • 3 medium ripe avocados, peeled
  • 2 cups fresh pineapple, finely chopped
  • 1 medium tomato, seeded and chopped
  • 2 jalapeño peppers, seeded and chopped
  • 1/3 cup fresh cilantro, minced
  • 2 tablespoons lime juice
  • 3 garlic cloves, minced
  • 1 teaspoon of salt
  • ½ teaspoon pepper
  • Multiple varieties of Tortilla Chips i.e. Blue Corn, Multi-Grain

Directions: In a small bowl, mash two avocados together. Next, stir in the pineapple, tomato, jalapeños, cilantro, lime juice, garlic, salt, and pepper. Finally, coarsely chop the remaining avocado and gently stir into guacamole mixture. Serve with chips.

Yields: 3-1/2 cups.

Watermelon Mojitos

Nothing says summer better than delicious watermelon. This twist on a classic cocktail will be a hit at your next summer pool party. For this recipe you will need:

  • 4 mint leaves
  • ½ of a lime
  • 1 tablespoon of superfine sugar
  • 4 ounces of seedless watermelon, cut into ½ inch cubes, plus a small wedge for garnish
  • 2 ounces of white rum
  • ½ cup ice cubes

Directions: In a glass, add mint, lime juice, and sugar. Use a muddler or the back of a spoon to mash ingredients. Next, add the watermelon to mixture and mash together. Pour the rum over mixture and add ice. Finally, garnish with a small watermelon wedge and serve cold!

Fruit Salads

Remember, you want a perfect dish to keep your menu light, healthy and refreshing. You could always make Caesar or House Salad. But since it’s summer, why not take advantage of the summer fruits available? Creating a scrumptious fruit salad will do the trick.

Fresh Fruit in Watermelon Bowl

If you’re looking to ditch a typical boring bowl for your fruit salad, what could be more festive than serving this dish in an actual watermelon? Save that rind from your mojito concoction! Doing so will add great décor and really WOW your guests. For this recipe you will need:

  • 1 whole seedless watermelon (about 12 lb)
  • 10 Cups of assorted seasonal fruits- chopped up into cube sized portions
  • Blueberries
  • Diced Mangos
  • Seedless Grapes
  • Cubed Pineapple
  • Halved Strawberries
  • Cut up Honeydew and Cantaloupe
  • Sliced Nectarines
  • Cut up Kiwis

Directions: Cut a small piece off from one side of the watermelon. Remove just enough to allow the watermelon to sit flat, lengthwise. Score a line lightly around the top third of the watermelon, then carefully cut through the line. Scoop out flesh from the base, making sure to leave the rind intact. Finally, fill the watermelon bowl with prepared fruit and serve chilled!
